DKM Travel Consultants has been highlighting the Emerald Isle this week and it reminded me that I had never shared a treasured family recipe which was given to me by my father-in-law and originally came from Danny’s grandfather. So without further ado, here is Pa’s famous Irish Soda Bread.
Irish Soda Bread
4 Cups of flour
½ Box of raisins
¼ tsp. salt
2 Cups of milk
½ Cup of sugar
1 tsp. caraway seed (optional, I do not like so I do not use)
4 tsp. baking powder
1 egg
1 tsp. baking soda (this was not on the original recipe but I just couldn’t fathom soda bread with no soda so I added it)
Mix ingredients until consistency slightly moister than bread dough but not like cake batter. It will be sticky. Form into a mound and place on a greased baking sheet. Set oven to 350* and bake 60 minutes.
