When it comes to ordering breakfast I almost always order blueberry pancakes. However, on one of our first trips to Hawaii, I decided to try something new and tried macadamia nut pancakes. I was hooked and tried to order these whenever they were available on the menu.
At a recent trip to Oahu, I ordered the macadamia nut pancakes at ‘Ama ‘Ama at Disney’ Aulani. They were the best pancakes I ever had! The pancakes are drizzled with a vanilla/caramel sauce with toasted macadamia nuts sprinkled on top. Yes, that does make for a decadent breakfast and are not something I would be able to eat everyday, but for a special vacation breakfast, bring it on!
The other place I thoroughly enjoyed some macadamia nut pancakes was at Kona Café at Disney’s Polynesian Resort. I hear the recipe may have changed as if my memory serves me correctly they used to have macadamia nuts in the batter and pineapple on top. Kudos to the chef to the extra crispy bacon I got as well!

Pancakes
- 1 1/4 C sugar
- 3 tsp baking powder
- 1/4 tsp salt
- 2 1/4 C all purpose flour
- 1 1/2 C milk
- 3 eggs
- 6 Tablespoons vegetable oil
- 1 tsp vanilla extract
Macadamia Nut Butter
- one stick room temperature butter
- 1/4 C honey
- 1/4 C toasted Macadamia nuts
Directions:
Sift flour into medium bowl. Add sugar, baking powder and salt. Add eggs, milk, vegetable oil, vanilla and beat until smooth. Preheat griddle or skillet to medium. For each pancake pour 1/4 C batter onto griddle/skillet and cook on first side until bubbles form and sides look dry. Flip over and cook until golden brown.
Combine butter, honey and toasted Macadamias. Use a spoonful to top pancakes.
